〔 保加利亞小黃瓜優格冷湯 Bulgarian Cold Yogurt Soup - Tarator 〕

到Sofia的第一個晚上,我跟沙發主Miro去超市採購,Miro買了一大袋小黃瓜還有一大袋番茄,對我是說一大袋裝得滿滿滿滿的,沒有在開玩笑的多。回到家之後他弄了一大盆沙拉,裡面有好多好多小黃瓜跟番茄,然後烤了油滋滋又發亮的保加利亞香腸。
我問他,小黃瓜是很常被用在保加利亞的菜餚裡嗎?Miro說,「我也不太確定欸,可是我就是很愛吃小黃瓜。」
結果隔天我去參加免費的food tour時,第一站吃的就是小黃瓜優格冷湯啊!又鹹又冷又酸但意外好吃的小黃瓜優格冷湯啊!!!!!聽起來超怪可是真的超適合在保加利亞乾熱的夏日飲用的,非常的消暑,是說不上來的滋味,加上我本身其實就是會直接把小黃瓜切片來吃的人 ... 所以我剛上網查了小黃瓜優格冷湯裡面到底裝了什麼:
兩根小黃瓜(約500克)、原味無糖優格(約500克)(所以小黃瓜跟優格比例是1:1嗎!)、3~4瓣蒜頭(保加利亞菜裡也很愛放蒜)(是要對付吸血鬼嗎?)(想太多)再依照個人喜好加入蒔蘿和核桃。優格要攪拌到變稀,如果覺得不夠稀也可以再加冰水或冰塊,把上述的食材通通丟進去攪拌再加上鹽跟油就完成了。
這麼簡單啊!簡單到我明天就想去買小黃瓜跟優格了啊!
其實巴爾幹半島的飲食文化大都很像,又冷又水的鹹優格是在鄂圖曼帝國時期從土耳其傳過來的,我在馬其頓也有喝到,但我在保加利亞時應該真的把我今年食用小黃瓜的扣打都用光了吧 ...。
The first night in Sofia, I went to the supermarket with my #couchsurfing host Miro. Miro bought bags of cucumbers and tomatoes. Yap I meant huge plastic bags packed with those! When we got home, he made us a huge bowl of salad mixed with lots of cucumber and tomatoes, then baked some delicious Bulgarian sausages!
I asked him if cucumber is a stable in #Bulgarian cuisine, he said he wasn't sure, but he just loves to eat cucumber ...
However, the next day I went on a free walking tour (Balkan Bites , a great experience if you want to know more about Balkan food and its Hungarian twist,) this Hungarian cold yogurt soup was the first thing I had! It was salty, cold, and sour all at the same time, but it was surprisingly tasty and refreshing!! I know the combination could sound weird, but it was perfect for the dry, hot Bulgarian summer. I really loved it, but I didn't know how to explain the taste, so I googled how its made:
Mix 2 diced cucumbers (500g), Plain yogurt (500g) till the yogurt is watery (So .. basically the proportion is 1:1;) Add 3~4 diced garlic cloves (Bulgarians also love their garlic according to my food tour guide .. maybe it's for fighting vampires? Okay just ignore my nonsense.) You can add some dill as well as walnut depending on your personal taste. Stir everything together with a teaspoon of salt and oil. You can add some water or ice cube if the yogurt is not watery enough. It is this simple :)
In fact, Balkan countries all have very similar food culture. For example, this cold and watery salty yogurt came from Turkey during the Ottoman Empire. I had it in the Bazaar in Macedonia as well, but I think Bulgaria really fulfilled all my cucumber needs for 2015 ... :P

Effortless, nutritious, yummy, and summery whole food breakfast!
我不喜歡夏天的炎熱和潮溼,但想到可以在泌涼的晨光裡享受色澤豐潤、滋味飽滿、口味多元(營養就不必強調了,不營養上不了我的牆),而且最重要的--不花力氣的自製懶人早餐,那一切好談。
延續全穀、免烹調、全方位營養的概念,今天早餐的免煮燕麥粥,和{原味食悟}裡的千層果香優格是表親,只是把當底的原味優格換成浸泡過夜的免煮生全穀或種籽(今天用燕麥。蕎麥、奇亞籽也很棒),其它就是隨喜添加,頂多切盤綜合當令水果罷了。好處還不僅於此哪,裝對了容器,還能直接帶著走,趕上班、趕上學從此無法成為不吃營養早餐的藉口!
*Basic no-cook oat cereal bowl recipe. 免煮燕麥粥基本食譜:
1. 1 cup regular rolled oat (or buckwheat) / 生燕麥(或蕎麥)一杯
2. 1&1/2 cup homemade cashew milk (or any milk you have)/ 自製堅果奶(我用腰果奶)或任何喜歡的奶製品1&1/2 杯
3. 1-2 tsp (or to taste) natural sweetener such as raw honey or maple syrup) / 天然糖蜜(楓糖漿或蜂蜜)1小匙,或喜歡的量
Directions:MIx everything together before bedtime. Put in the fridge overnight. Topped with granola, fruits, or any superfood ingredients you have before serve. Use lidded mason jars to make easy-to-go breakfast bowls.
作法:
將上述食材混合拌勻,睡前放在冰箱裡浸泡過夜就行了。若隔天要帶著走的,可以裝在有蓋的玻璃容器裡。怕一早太涼的,可以像我一樣,倒一盆熱開水,把自冰箱取出的燕麥杯直接放進熱水中回溫個十來分鐘。等的同時洗切水果。大熱天的,吃室溫沒問題啦。吃前再加進以下任何隨興組合的建議食材,疊上綜合水果, 如左圖。
*可加進燕麥粥食材suggestions for toppings:燕麥酥(granola)、奇亞籽(chia seeds)、磨碎的亞麻籽(ground flax seeds or flax meal)、大麻籽(hemp seeds)、酵母(nutritional yeast)、花粉(bee pollen)、生可可粉(raw cacao powder), etc.
ps. 我剛從南法帶了點乾燥玫瑰花回來,揉碎灑了點進去,多了淡淡的愉悅花香。你當然也可以自由發揮想像力和創意囉!

鬆餅為什麼又鬆又軟??How are pancakes made soft and fluffy ? ?
A.砂糖 80g
鹽 適量
檸檬皮 1/4顆
B.全蛋 3顆
蜂蜜 5g
沙拉油 12g
優格 15g
玉米粉 20g
泡打粉 7g
低筋麵粉 165g
牛奶 135g
C.奶油 1小塊
D.大福皮 1包
紅豆粒 適量
抹茶冰淇淋 適量
煉乳 適量
防潮糖粉 適量
A.80 grams granulated sugar
Salt to taste
1/4 of a lemon peel
B.3 whole eggs
5 grams honey
12 grams salad oil
15 grams yogurt
20 grams corn flour
7 grams baking powder
165 grams low-gluten flour
135 grams milk
C.1 small piece of butter
D.Mochi rice skin wrap 1 sheet
Suitable amount of red beans
Suitable amount of green tea ice cream
Suitable amount of condensed milk
Suitable amount of moisture resistant powdered sugar
作法:
1.將砂糖、鹽、檸檬皮屑混合拌勻。
2.作法1加入所有材料B,混合拌勻至糖融化成麵糊。
3.將作法2的麵糊過篩,靜置30分鐘以上。
(重點提示:麵糊靜置很重要!靜置是讓麵糊更均質美味的關鍵!)
4.鑄鐵鍋燒熱,關火放入奶油抹勻,倒入約90g的麵糊,擺上一片大福皮,再倒入約90g的麵糊。
5.烤箱預熱,將作法4的鬆餅麵糊放入烤箱中,以上下火180℃/180℃,烤約20~25分鐘。
6.將烤好的鬆餅取出倒扣放涼,再擺入盤中。
7.在烤好的鬆餅上擺上紅豆粒,撒上糖粉,再擺上抹茶冰淇淋、擠上煉乳即可。
Preparation method:
1. Add in granulated sugar, salt, lemon peel bits and mix well.
2. Take the product of step 1 and the ingredients from B. Add these ingredients together and mix until the sugar dissolves into the batter.
3. Take the batter from step 2 and let sit for at least 30 minutes.
(Key Point: Letting the batter sit is very important! Remaining still is the key to making the batter more homogeneous and delicious! )
4. Heat up a cast iron pan. Turn off the heat, put in the butter, letting it melt and spread. Pour in about 90 grams of the batter, lay in the Mochi rice wrap sheet, then pour in the remaining 90 grams of batter.
5. Preheat the oven to 180℃. Put the pancake batter from step 4 into the oven and bake for 20-25 minutes at 180 ℃.
6. Remove the baked pancake. Let it cool, then turn it over and place onto a plate.
7. Put the red beans onto the baked pancake and sprinkle with powdered sugar, then put on a scoop of green tea ice cream and finish it by squeezing on a little canned condensed milk.
